Cinco de Mayo Recipe: Mexican Shredded Pork a La Caja China!

If you are like us, any excuse to party is more than enough reason to call everyone up and fire up the Caja China! With Cinco de Mayo just a couple weeks away, we’ve decided to do something a little different and provide you with a brand new recipe. It incorporates classic flavors that are signatures in so many amazing Mexican dishes…chile peppers, chipotle, and garlic. This is one ass kicking way to prepare pork folks. So without further ado…
Mexican Shredded Pork a La Caja China
Ingredients
  • 1 (30 pound) whole pig
  • 5 tablespoon salt
  • 12 (4 ounce) cans diced green chile peppers
  • 15 cloves garlic, crushed
  • 1 1/2 cup chipotle sauce
Directions
  1. Place the whole pig (butterflied)  in your china box cooker, and season with salt.
  2. Allow pork to cook for 2 hours.
  3. When adding fresh charcoal after second hour, place chile peppers and garlic on top of roast. Pour in the chipotle sauce and 1 1/2 cup water.
  4. Replace lid with fresh charcoal, and cook approximately one hour.
  5. Flip pig to crisp skin for approximately 45 minutes. If not crisp, replace lid and continue to cook, checking every 10-15 minutes.
  6. Once completely cooked, remove the pig and allow to cool for 20 minutes.
  7. Served traditionally with white rice.
  8. Enjoy!
